Description

A dessert recipe perfect for everyone, especially those on a gluten free diet.


Ingredients

Scale
  • 1 egg
  • 2/3 cup honey
  • ¼ cup light olive oil
  • 1 teaspoon vanilla
  • 2 cups almond flour
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 cups raw grated zucchini

Instructions

  1. Preheat oven to 325 degrees
  2. Mix egg, honey, oil, and vanilla in a bowl.
  3. Mix all dry ingredients in a separate bowl.
  4. Combine wet and dry ingredient then add zucchini.
  5. Grease and flour bread pan. Pour in mixture.
  6. Bake for 45-55 minutes (check with toothpick to make sure it is done).
  7. Remove from oven and let it cool completely before cutting.
