Avocado Mushroom Soft-Boiled Egg Loaded Toast

Description

This toast is hearty, delicious and works great for a snack or meal!


Ingredients

Scale
  • 1 slice bread of your choice
  • ½ an avocado mashed up
  • 1 Hard soft-boiled egg
  • Red pepper flakes
  • 2 sautéed mushrooms
  • Salt
  • Black pepper

Instructions

1. Soft-boiled egg (while this is happening you can start the next step)

-Boil a small pot of water. Then place the egg inside.

-Set timer for 5 minutes (6 if you want the yolk less runny).

-Once timer is up remove from heat and place the egg in a bowl with water and ice (ice bath).

-Let the egg sit in the bath for 5-7 minutes. Then gently remove the shell.

2. Smash avocado then add a little salt to it and mix.

3. Sautee your mushroom in olive oil and salt.

4. Once your egg is ready, place on top of your toast (along with the mushrooms) and cut in half.

5. Season with pepper flakes and salt as desired.
