Ingredients

- 1 egg
- 2/3 cup honey
- ¼ cup light olive oil
- 1 teaspoon vanilla
- 2 cups almond flour
- 1 teaspoon salt
- 1 teaspoon cinnamon
- ½ teaspoon baking powder
- 1 teaspoon baking soda
- 2 cups raw grated zucchini
Instructions
- Preheat oven to 325 degrees
- Mix egg, honey, oil, and vanilla in a bowl.
- Mix all dry ingredients in a separate bowl.
- Combine wet and dry ingredient then add zucchini.
- Grease and flour bread pan. Pour in mixture.
- Bake for 45-55 minutes (check with toothpick to make sure it is done).
- Remove from oven and let it cool completely before cutting.
