Persian Golden Soup (Kaljoosh)

No sun in the sky? Look in this bowl of soup for your sunshine and warmth. This golden soup is perfect for a gloomy day! 

This was one of my favorite soups growing up! My mom would make it for me as a snack or to go with my lunch. I would always get a big bowl and dip a toasted french baguette in it. So delicious!

Description

No sun in the sky? Look in this bowl of soup for your sunshine and warmth. This golden soup is perfect for a gloomy day!


Ingredients

Scale
  • 6 oz. plain yogurt
  • 2/3 cup water
  • ½ tsp. turmeric (more if desired)
  • Salt to taste
  • Red pepper flakes and black pepper (to taste)
  • ½ an onion diced
  • 2 tsp. dried mint
  • 1 tbsp. olive oil

Instructions

  1. On medium heat add 1 tbsp. oil and sauté the onion.
  2. Add turmeric. Then add the dried mint (as much as you like). I usually do 2 tsp.
  3. Add red, black pepper, and salt.
  4. In a separate bowl add the yogurt then water. Mix well. Add salt. Mix well.
  5. Pour yogurt mixture to the pot and mix constantly. Do not stop mixing or the yogurt will curdle.
  6. Once hot, remove pan, pour in a bowl and enjoy.

Notes

You can add more water if you want a thinner consistency.
