No sun in the sky? Look in this bowl of soup for your sunshine and warmth. This golden soup is perfect for a gloomy day!
This was one of my favorite soups growing up! My mom would make it for me as a snack or to go with my lunch. I would always get a big bowl and dip a toasted french baguette in it. So delicious!

- ½ an onion diced
- 2 tsp. dried mint

Instructions
- On medium heat add 1 tbsp. oil and sauté the onion.

- In a separate bowl add the yogurt then water. Mix well. Add salt. Mix well.
- Pour yogurt mixture to the pot and mix constantly. Do not stop mixing or the yogurt will curdle.
- Once hot, remove pan, pour in a bowl and enjoy.
