Berry Good Jam

June 6, 2018 By Pardis DeFord Leave a Comment

This homemade jam will leave you wondering why anyone ever buys jam. Not only is it simple to make but lower in sugar and higher in fiber than your typical jar of jam. Now I can jam to that!

Description

This homemade jam will leave you wondering why anyone ever buys jam. Not only is it simple to make but lower in sugar and higher in fiber than your typical jar of jam. Now I can jam to that!

Ingredients

Scale
  • 1 ½ cups frozen blueberries
  • 1 tablespoon water
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon honey (2 if you want it to be sweeter)
  • 1/4 teaspoon vanilla
  • 1 tablespoon chia seeds

Instructions

  1. Add all ingredients in a small pot.
  2. Bring to a boil then mix and turn to low heat.
  3. Cook on low heat until blueberries are soft (about 10 minutes).
  4. Squish blueberries with a fork then remove from heat.
  5. Let cool, then place in an airtight jar and store in the refrigerator.

Notes

I like my jam to be mildly sweet so I only add 1 tablespoon of honey. You can start with 1 tablespoon and if the mixture does not taste sweet enough, then add another tablespoon.
